I promise, I’m not hallucinating due to all this holiday kitchen baking heat. ๐ Okay, maybe I’m only half-hallucinating due to holiday bake fever. But, for real. Dried apple slices are so apple gummies- & marshmallow-like!
I’ve been enjoying a few or more dried apple slices in the last couple months and it’s been this weirdly-satisfying chew hobby—like, if chewing could qualify as an actual hobby and chewing gum were out, I’d totally be chewing on all the bags of dried apple slices. But, like, the apple slices inside the bags, not the, er, actual bags.

Okay, so this homemade apple cinnamon granola recipe is not only the best gluten free granola recipe, but it is also THE reason why I know that dried apple slices taste like the perfect hybrid of apple gummies and marshmallows. And the reason why you’ll absolutely love the balance of sweet, crunchy gluten free granola clusters dotted with delicious tart dried apple slices and complemented with ground cinnamon YUM.

Apple Cinnamon Homemade Gluten Free Granola Recipe

Dry Ingredients
- 1 cup assorted nuts, roughly chopped
- ยฝ cup walnuts, rough chopped
- 1 cup large, unsweetened raw coconut chips*
- ยฝ cup gluten free rolled oats
- ยผ cup ground flaxseed
- 1 teaspoon ground cinnamon
- ยผ teaspoon salt, optional
- 1 tablespoon coconut sugar
Wet Ingredients
- 2 tablespoons melted coconut oil
- ยผ cup pure maple syrup
Add-ins
- ยฝ cup dried apple rings or slices, chopped
Instructions
- Preheat the oven to 300ยฐF. Line a medium or large baking sheet with parchment paper or greased foil. Set aside for later.
- Add all dry ingredients to a large bowl: nuts, coconut, oats, flaxseed, spices and sugar. Stir until well mixed.
- Add wet ingredients: coconut oil and maple syrup. Using a rubber spatula, stir and fold until well mixed.
- Pour mixture onto the prepared baking sheet. Using a rubber spatula, press down and pack the granola mixture together to create an even, flat, and very tightly-packed layer, about ยฝ inch thick. Your granola may not cover the entire baking sheet. Now, nudge the sheet of granola apart in the center (dividing the tightly-packed layer in half), to let air through.
- Bake for 20 minutes. Rotate baking sheet. Bake for 18-22 more minutes, until granola is a deep golden brown. Mine took 40 minutes total. Do not flip or move granolaโit is fragile and needs to crisp up while cooling.
- Place baking sheet on a cooling rack. Allow to cool for about 30 minutes, or until completely cooled and firm. Break sheets of granola into clusters. Toss with apple slices. Enjoy! Storing instructions below.

- *Coconut Chips vs. Coconut Flakes: I recommend using large coconut chips in this recipe instead of small coconut flakes. Here are the large, unsweetened raw coconut chipsย that I use in this recipe.
- Where to Buy Ingredients: Dried Apple Rings | Coconut Sugar | Raw Coconut Chips | Ground Flaxseed | Gluten Free Rolled Oats | Coconut Oil | The nuts I use in this recipe: Walnuts | Almonds | Pecans
- Storing Notes: Store in an airtight container for 1-2 months at room temperature. I like using these reusable zip bags (variety pack) to store my granola.
