Coffee Coconut Frappuccino (V +GF): a 3 ingredient recipe for deliciously thick, creamy frappes bursting with coffee and coconut flavor. Vegan, Paleo, Gluten Free, Dairy Free.

Oh, happy day! ☺ This morning was dewy, lightly chilly and an energizing kind of brisk. The sun was just starting to peek out from the clouds and birds were chirping. No really, there were actually birds chirping. Does it get more idyllic than that?

Normally I wouldn’t be able to tell you anything about the weather or even about a single bird noise… because, this is me all day, everyday: seemingly nonstop computer time, cancelled plans to go outside because something internet-y happened and barely closing my eyes and turning off an electronic device before bed.

But no more! Dash it all to the wind… no more. ๐Ÿ˜‰ If you’ve been reading the last few posts, you know that Erik and I have newly committed ourselves to outdoor time. The thing is, with having internet jobs, we don’t get out much… and the internet is always alive with activity. This equals us having loads of trouble unplugging.

But unplug we (kinda) have! We’ve been taking baby steps, but it’s working. First, there was a walk, and then there was a longer one.

And then… drum roll please… we went for a run!! ☺ This. Morning. That’s how I can sit here, and tell you all about the birds and give you the weather report. Imagine me waving my arms over that interactive map and elegantly pointing out storm fronts. Or something. ☔️

To commemorate this spectacular occasion, I whipped up a Coffee Coconut Frappuccino, just for you. This is the kind of refreshment you deserve after a nice long run, or keeping to your promise to turn off the computer a bit earlier than usual, or maybe even calling off of work an hour earlier to go meet a friend for some shopping.

Can you believe, I actually forgot how good it felt to just go outside. Did I tell you, back when Erik and I were living in San Francisco (yes, we move a lot, a lot), we used to head to the beach for runs?

It was the best feeling in the world. We’d strap on our most comfortable running shoes, argue about who had to carry the water bottle (Erik, of course), and just run. Run from the most concrete, gray and glass cityscaped areas through the most colorful, lively neighborhoods, into the ‘burbs… and finally glide across patches of grass and road until we saw it: the beach.

There’s nothing more beautiful than a beach. It’s just waiting for you to come on over, take off your shoes and dig your toes right in. Relax, live and just breathe.

Now that we live in Maine, far from the beach, we’re just learning how to find our running legs again. Who wants to join us? We’re starting with just a short, 10 minute run (okay… 5 minute), with 15-20 minutes of walking three times a week. Then, we’re gonna kick it up a notch. I mean, we really have to before winter storms in and shows us who’s boss. Plus, Holiday Eating. Need I say more?

In the mean time, let us all stay nice and energized with something a little special. Just between you and me, we’re gonna call this frappe the Heck Yeah, I Kicked Butt at Life Today and I Deserve This Coffee Coconut Frappuccino.

Okay, it’s a little long. Let’s also call it the Working Title Coffee Coconut Frappuccino.

Ahem. Let me tell you all about the awesomeness of this frappe. This Heck Yeah, I Kicked Butt at Life Today and I Deserve This Coffee Coconut Frappuccino is:

  • made with just 3 simple ingredients
  • super creamy and thick
  • vegan, gluten free, dairy free and paleo
  • fluffy and treat-worthy
  • easy, easy, EASY to make
  • allergy-friendly and plant-based
  • bursting with just the right amount of coffee and coconut
  • the perfect treat to celebrate an accomplishment ?

So whaddya say? Would you like me to hand you a straw? Let’s make some time today to do something nice for ourselves. You grab the water bottle, I’ll lace up my shoes. Let’s do this!

And tell me, what have you been planning on doing, but just haven’t gotten around to?

Sending you all my love and maybe even a dove, xo Demeter. ❤️

OMG, I’m sooooo happy / excited / proud !!! You started to run! Weeeeee I have a running buddy now :* It’s great, isn’t it?! I feel you with internet life (same here!) Honestly, running is what keeps me sane those days. I had like 2 weeks vacation and I unplugged 99%, okey okey 67% ๐Ÿ˜› and I said to myself when I come home I won’t work that much. Guess what… nothing changed. I’m plugged again all the way. And I NEED this amazing coffee frappuccino like RIGHT NOW ๐Ÿ˜‰ Looks amaziiing. Sharing this dear friend ๐Ÿ˜‰ Have a wonderfull weekend.

Yeah!!! It’s been AMAZING, Natalie! Erik and I have promised ourselves at least 2, but not more than 3 runs per week. Keep it nice and even-keel, ya know? Aw… I hope that you’re able to reduce some of that working time and instead replace it with some much-deserved running time. ๐Ÿ™‚ Thank you for sharing. Keep me posted on your running updates! Have a great one, Nat! xo

I love your new commitment to outdoor time!! I really tried that this summer and we went on our very first morning walk last week!! It was pretty idyllic indeed to ACTUALLY hear birds chirping. I’m not a morning person but once I got up it was easy. Cheers to that! I would love to come back to this frappuccino afterwards – YUM!!

    1. Demeter | Beaming Baker says:

That’s awesome, J! Morning walks are just so refreshing! Plus, birds chirping: who knew that was real?? Hahaha. J/k! Big cheers to you, my friend! xoxo

Runs are the best!! (If you aren’t injured!) They really help you see the world around you in a refreshing way – even if you’re in pain sometimes ๐Ÿ˜‰ This frap would make the best recovery drink! Gorgeous as always!!

    1. Demeter | Beaming Baker says:

Oh totally. I cringe at the thought of running injured. That’s when you definitely have to take a break and recuperate. Yay for yummy recovery drinks! Thanks Megan! xoxo

  5. Natalie | Feasting on Fruit says:

No way, real life BIRDS. And they chirp? You mean that iPhone ringtone is not just completely made up? Such craziness! Today it’s running outdoors, tomorrow you’ll be backpacking the world. I’m very proud of you my friend! You have a lot of great names in there, but I really want to throw the word Classy in front of that title, because Coffee + Coconut sounds pretty dang fancy to me! It’s late at night and I’m still online which I know is bad, but this just looks toooooooo good to close the screen?? Part of me wants to turn off my computer, go for a run, then come back and reward myself with a tall frothy frappuccino. And the other part just wants to go straight for the frap? I did take a walk today so…yeah I think I deserve it? Now I’m off to go see what goodies you posted last week while I was away…โค๏ธ

    1. Demeter | Beaming Baker says:

YEP!!! Can you IMAGINE.? Hahaha. Who knew there was so much… stuff outside! Lol. I don’t know about backpacking, but it sure sounds like a fun idea! But… where would I put my mixing bowls and oat flour?? I say have a great run and slurp this classy bad boy down, like woah. ๐Ÿ˜‰ Or, just go for it! ๐Ÿ˜‰ So glad you’re back, Nat. โค๏ธ

  6. Sharon says:

Bravo and Woo-Hoo for you, Demeter! You’ve created another winner!

  8. Loreto Nardelli says:

Hi Demeter, I love this frappccino. The fact that it is gluten free and dairy free makes it all the more amazing. I hear you on the outside thing. This morning I was out before the sun rise watering plants and cleaning the pond. I love that feeling of thew fresh air on my skin and the silence of that time of day. It feels like time just stands still and your body melts into nature. Thank you for reminding me of how special that is. Well done on the frappuccino and well done on taking the time to be outdoors.
    Have a great week.
    Loreto

    1. Demeter | Beaming Baker says:

Thanks so much Loreto! ๐Ÿ™‚ There’s just something amazing about being outside, even before the sun rises. The day is so crisp and fresh. ๐Ÿ™‚ I love the sound of watering plants that early in the morning–it must be so calming. ๐Ÿ™‚ Thank you for sharing about your experiences, Loreto. Have a fantastic week, my friend!

Once again, Iโ€™m really proud of you guys! Running is awesome, being outside is super awesome, and running outside with your boyfriend is the most awesome thing ever ๐Ÿ˜€
Iโ€™d definitely go for a run with you, but just if you promise me Iโ€™ll get a big glass of this delicious frappucino after it. Normally Iโ€™m not that into coffee, but those frozen bananas totally convinced me. Pinned!

    1. Demeter | Beaming Baker says:

Aw, thanks E! ๐Ÿ™‚ So many forms of awesome… what more can you really ask for in life? ๐Ÿ™‚ Heck yeah, I’ll whip up an extra big glass for you. ๐Ÿ˜‰ Muah! xoxo
