Coffee Talk
Coffee Talk #1: a chance to catch up and chat awhile. π
Good morning! How was your Easter? Did you have plenty of good eats and good times with your family and loved ones? π I truly hope you did. Meanwhile, I thought we could take a nice little break from recipes for a change and chit chat.
Welcome to my very first Coffee Talk! Lately, Iβve been trying to focus more of my blogposts on writing about the recipe and a bit less about myself and the stories I love to share. Thatβs been a bit of a downer since I love connecting with you guys. Iβm probably going to change things back up again and start sharing more stories. π I figured a great way to get back into the swing of things was to start with Coffee Talk. .Β β
By the way, how cute/cool/slightly-creepy/fun is this bunny (??) filter on Instagram? Love that it added a lil’ makeup action on me and my mom’s faces. .
Anyway, I thought it was high time for a new Catching Upβ¦ but with a more fun name. How do you like Coffee Talk? Okay, letβs get it started!
Sneak Peek of an Upcoming Recipe… can you guess what it is?
We formed an LLC. π How COOL is that? A while back, I told you that Erik finally joined me full-time on the blog. The next step: making everything official. We finally took the plunge and created a business entity for Beaming Baker!!! Weβre both beyond excited about this news. It just makes everything seem more real.
It was only about 2 years ago that I took the plunge and decided to start a food blog (<– tips here, in case youβre interested in doing it yourself .). And two years later, on the actual 9 year anniversary of our first date (for real), we formed our LLC! That was pure coincidence, btw.
Now we feel like we should go do something big like get tattoos or go bungee-jumping or pop bottles of champagne (which neither of us even like lol), or something crazy to commemorate it. Any suggestions?
Iβm working on a few new recipesβ¦ that Iβm VERY excited about! Letβs just say the words βlemonβ and βpoppy seedβ might be involved. π Okay, fine, you got it out of me! A lemon poppy seed recipe is just about two shakes of a lambβs tail away from being shared on the blog. Are you excited?
A sneak peek of the lemon poppy deliciousness coming your way:
Update: the recipe’s out! Here: Healthy Lemon Poppy Seed Muffins Recipe
Meanwhile, the basis for that recipe is *spoiler alert* the basis for my delicious basic muffin batter. Itβs been in the works for a while because I really wanted a batter that was versatile, ridiculously yummy (duh) and made with the healthy, whole ingredients that you know and love. Wait til you try it. Itβs AMAZING.Β Update: here’s the recipe:Β Healthy Lemon Poppy Seed Muffins RecipeΒ .
Stay tuned for the recipe and all the muffins recipes coming your way! Btw, let me know what your fave muffin flavors are⦠I might just work on it and share!
In the meantime, tide yourself over with a few Beaming Baker Muffin Reader Faves:
- Easy Gluten Free Dark Chocolate Muffins
- Gluten Free Maple Pecan Pumpkin Muffins
- One Bowl Double Chocolate Banana Muffins
- Gluten Free Vegan Banana Nut Muffins
Iβve been enjoying reading all the feedback, pics on Instagram, comments and emails about the recent, most popular recipes on Beaming Baker: 2 Ingredient Chocolate Coconut Candy Clusters, Paleo Coconut Macaroons, andΒ Vegan Chocolate Chip Cookies. If you havenβt yet, youβve got to try them! One reader asked for a Strawberry Coconut Macaroon. Anyone else interested in this? If enough people are interested, Iβll get to work on the recipe. π
Trip to Hawaiiβ¦ so weβre currently planning a vacay to Hawaii!! Any recommendations of where to go? Itβs going to be our first real vacation in agesβ¦ I seriously canβt even remember when we had our last one. Weβre hoping to really unplug and have some quality time together. Anywho, more in that in the next Coffee Talk. π
Let me know which island we should go to! My sister Penny says Kauai is the BEST. Thoughts?
Fall, yep Fall, Recipe Requestsβ¦ Meanwhile, login in your recipe requests for the fall asap! Yes, Iβm totally working on these right nowβ¦ *blushing* I was thinking something along the lines of more crisps (like Paleo Apple Crisp), pumpkin everything andβ¦ what else?
I canβt wait to hear your thoughts on it all! As always, itβs the best just sitting around and chatting with you (with or without the fresh baked muffinsβ¦ okay, with!). Let me know whatβs new with you!
Sending you all my love and maybe even a dove, xo Demeter β€

Lemon + Poppy Seeds, I”m in! <3
Yeah!! I’m so excited to hear what you think, Jane! π .
This is such a wonderful idea!
Thanks Delaney! π
Love the Coffee Talk/ Catching up posts, it makes the recipes you post feel more “real”, if that makes sense. So thumbs up on keeping stories etc included in your blog. Kauai is amazing and much more mellow than Maui or Oahu. Maui and Oahu are fun, but defiantly more populated and touristy. The big island is also amazing and really diverse from tropical vegetation to dry lava beds. You really can’t go wrong with a vacay in Hawaii!!!
Aw, thank you so much for your feedback, Heidi. β€οΈ I’ve been teetering back and forth between whether or not I should do more personal stuff or just stick to the recipe. You’ve encouraged me to stay true to myself–and to open up. Thank you for the tips on Hawaii! It’s really sounding like Kauai at this point. Hugs! .
I made your 4 ingredient Coconut Macaroons and people LOVED them. No one could believe they were vegan and refined sugar free. I’d love to see LEMON Coconut Macaroons. Especially with that Lemon glaze from your sneak peek.
Woohoo!! So happy to hear it, J. π I may or may not have some plans for lemon coconut macaroons this summer. Stay tuned! π P.S. Drizzling them with lemon glaze sounds AMAZING. .
π Look forward to it!
I have been to Kauai and Hawaii (the big island).
It depends on what your looking for in your vacation.
Kauai is totally green, absolutely beautiful, but totally green. If you like doing stuff outside, hiking, beaches, scenic spots, etc itβs good. Itβs supposedly the most beautiful island, not very touristy though.
Hawaii (we go to Kona) is beautiful in a different way. Itβs colorful, like even the random bushes are pink and orange. The beaches are good but theyβre more rocky beaches then sand. Itβs not hugely populated like Maui or Oahu, itβs very good for βtouristsβ in a cute little shop way. We preferred Kona to Kauai, but we would go back to both.
As far as snorkeling and water stuff, either way works. As far as a ton of people, both arenβt horribly cramped like Maui and Oahu are.
Our first time we island hopped. Iβd recommend that! Lol! Spend a few days on both!
I am LOVING your expertise and advice about Hawaii. I just shared your comment with Erik and now he’s even more excited about going (if possible haha). My mom and sister went to Kona and just loved it. I think we’re looking for something a bit more low-key, secluded and lush-nature-y, so Kauai sounds like it might be perfect. Thanks so much for your advice, Elisabeth. .
Strawberry Coconut Macaroons would be very special for Mother’s Day! Recipe, please!
Hi Ann, thanks for letting me know about your interest in the strawberry coconut macaroons! I’ve already finished my recipes for April and May, so perhaps it will be shared during the summer. π No promises, but I’ll get to work on it! π
Those muffins look amazing! I can’t wait to give them a try. I love Hawaii and I hope to go back again soon.
Thanks Des! It’ll be my first time, so hopefully it’s amazing. π
WOW, congrats on the jump to full time blogging. That is a goal I am also working towards. And the upcoming and new recipes look awsome
Thanks Susie! It’s been our dream for quite a while now. π Best of luck to you!
I just can’t wait for the lemon poppy seeds muffins recipe to come! They look absolutely perfect and so delicious β₯
Three cheers for poppy seed muffins!! Thanks Natalie!
Wow Hawaii how wonderful and congrats that is a great accomplishment! have a great time
Thanks Claudia!
Congrats on the LLC!! So inspired to see what you can accomplish with a blog in two years. I hope to be there someday too :). And Hawaii is also on my bucket list. I hope you have a wonderful time!
Thanks so much, Ann! Believe in yourself–you can do it! Thanks so much for your sweet comment. .
Those lemon poppy seed muffins look just amazing! Also, Hawaii is such a fab place to vacay. I ran my first marathon in Maui and absolutely loved the island. If you get to go there, I definitely recommend hiking the volcano and doing the Road to Hana.
They’re SO good! Wait ’til you try the recipe! π Oooh, now you’ve got me all excited about Hawaii! I’ve got to take note of everything you mentioned.
Second vote for Maui…the best!
Awesome!! Maui sounds like so much fun! Thanks for your input, Sheryl. π
