When I was a little kid, I absolutely loved crunchy, salted peanut butter. That texture and flavor was just everything. But as an adult, I’m all about the creamy. And the unsalted because sometimes that salt just throws the entire recipe out of whack.

I know a few brave folks who’ve swapped the creamy peanut butter in one of my recipes with crunchy with exciting results. I say exciting because it totally makes my eye tick with worry over these changes and the unexpected results that may occur.

Y’all are just way more brave than me. 😉

Meanwhile, I guess I just got to thinking (too much apparently) over creamy vs. crunchy. And now I’m realizing that I need to find new interests. Heh heh. I’d ask my mom for advice on this, but then she’d just start telling me why she likes crunchy more than creamy and discuss the merits of homemade peanut butter over store-bought. Then she’d suggest adding almond butter and we’d get into a whole thing about the differences between the two. Then, she’d ask me to make these no bake chocolate peanut butter cup oatmeal bars with almond butter and see how those would taste. Then… oy!

Like mother, like daughter. What can I say? 🙂

Peanut butter is SO a theme on this blog. SEE: peanut butter coconut oatmeal cookies, 4 ingredient no bake peanut butter coconut bites, easy vegan peanut butter cookies, peanut butter chocolate chip oatmeal cookies, and… seriously there’s more. But I would be going on for days!

Now, who else is happy about this? Remember a while back, I told you a friend asked me if chocolate was a theme for Beaming Baker? At first I was a tad insulted, then hungry, then like, duh, then, like… Why, yes, it is!!! Ending on a proud and stomach-rumbling note, of course.

But what about peanut butter? I think last year I went one whole month without releasing a peanut butter recipe. And let me tell you folks, it was an edgy month. Things just didn’t sit right with me. The hairs on the back of my neck stood up at random intervals, I’d randomly start craving peanuts, I’d hear pitches of noise that Erik wouldn’t hear.

And the problem? Severe peanut butter deficiency.

4 Ingredient No Bake Chocolate Peanut Butter Oatmeal Cookies (V, GF, DF): an easy recipe for perfectly chewy no bake peanut butter cookies bursting with chocolate flavor. Vegan, Gluten-Free, Dairy-Free.

Instructions

  1. Line a baking sheet with parchment paper or wax paper. Set aside.
  2. In a large, microwave-safe bowl, add peanut butter and maple syrup. Whisk together until well mixed.
  3. Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out and become fluffy (about 4-7 rounds). Whisk in between heating increments. *Stovetop instructions in Notes.
  4. Add oats and cocoa powder to the peanut butter mixture. Stir and fold until thoroughly combined.
  5. Using a medium cookie scoop, scoop and drop balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Using a fork, flatten cookies to desired thickness.
  6. Chill in the freezer for 15-25 mins, until firm. Enjoy firm, or allow to thaw for 10-15 minutes. Cookies will become soft and chewy at room temperature. Storing instructions below.

    Thanks for sharing this easy yet yummy recipe! 🙂

    For stovetop method, how long will it take for the peanut butter and maple syrup to become dry & fluffy? e.g like 1 or 2 mins later from the time it started boiling or longer? And does it matter how long u boil it for? Will it affect the ultimate texture of the cookie or the cookie unable to set later?

    Lastly, can we put it in the chiller instead of the freezer to firm it up? And can we use quick oats instead of rolled oats?

    1. Hi Cherale! The time it takes for it to become fluffy varies, but once you see the bubbles form throughout the mixture it’s ready. Heating the mixture too long will affect the texture of the cookie, so make sure not to over cook it. You can definitely firm in tune fridge, it’ll just take a bit longer to set. And as for the oats, I’d recommend using rolled oats as quick oats will change the texture and wet/dry balance. Hope all his helps! 🙂

  3. I tried this the other day. Chocolate-y… Mmmm.. However, even though it’s stored in the fridge, it’s very soft and sticky so it could not be stacked as in the photos without sticking to each other. I have to eat it immediately from the fridge and my hands still end up ‘greasy’. Is this how it’s supposed to be? I don’t seem to have much luck with no-bake recipes because they don’t seem to set right. Thoughts?






    1. Hi Ruth-Ann, so sorry to hear about this! If you’re using natural peanut butter, did you give it a good stir so it’s well mixed before using? Also, when you heated the Pb & maple syrup together, did you do so until it was dried out and fluffy? The cookies should be soft and just a little sticky the first day, after that, they’re soft, but firm and on the drier side. Hope this helps!

      1. Thanks for your reply! Yes, it was stirred well but I can’t say for sure that I heated the PB and maple syrup until dry and fluffy. I’m not quite sure what that would look like but it’s worth another shot. So far I’ve left in the fridge between parchment and in an old biscuit pan. The ones on the bottom layer are more as you describe but I do have to take out and eat right away. Back on my to-make list!

  5. These sound easy and delicious. I try not to use a lot of sweeteners. Any thoughts about reducing the quantity of maple syrup? Like how much could I cut it down before ruining the whole deal??






    1. Thank you! You might be able to reduce the maple syrup by a few tablespoons. I’m not 100% sure because I haven’t tested reducing it before. Try removing some of the maple syrup and reducing the same amount of oats to even things out. Good luck!

  6. I cannot eat chocolate. I know… it sucks. (I get really bad migraines from caffeine.)
    What would you replace the cocoa powder by in here? Can I just omit it and not replace it?

    1. There are dairy free chips. My grandson is allergic to dairy but loves chocolate chip cookies so I make them with dairy free chips. Hope this help with eliminating migraines.

  7. I don’t think I have a preference when it comes to peanut butter – I love ALL the textures – gah currently there’s an open container of crunchy PB and creamy PB and a bag of chocolate chips on my kitchen counter and both containers of PB have spoons in them – and that’s all am saying!!
