As I’m writing this, I’m shivering like no other. I’m getting that freezy-shivers-almost-headache and I’m bundled up like I’m living on the highest mountain in the coldest place on earth.

Amazing Chewy Vegan Oatmeal Raisin Cookies (Gluten Free)

The BEST VEGAN chewy oatmeal raisin cookies EVER--crispy edges with a CHEWY center, bursting with oats, warm spices & juicy raisins! Gluten-Free, Healthy Ingredients, Dairy-Free.

Ingredients

Add-ins

  • 1/3 cup raisins
  • 3 tablespoons walnuts, finely chopped (optional)

Optional Toppings

Instructions 

  • Preheat oven to 350ยฐF. Line a cookie sheetย with parchment paper or greased foil. Set aside.
  • In a large bowl, whisk together all of the dry ingredients: oats, oat flour, golden ground flaxseed, spices and salt.
  • In a medium bowl, whisk together the wet ingredients: coconut oil, almond butter, maple syrup, coconut sugar and vanilla.
  • Pour the wet mixture over the dry mixture. Using a rubber spatula, stir and fold until well mixed. Fold in raisins and walnuts, if using.
  • Using a small or medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheetโ€”spaced evenly apart. Optionally, dot cookies with raisins and walnuts. Using a fork, flatten cookies to desired thickness. The cookies will crumble at the edges a bit after flatteningโ€”use your fingers to squish the edges back together.
  • Bake for 10-15 minutes. Mine took 13 minutes. Place baking sheet on a cooling rack, allowing cookies to firm up for about 15 minutes. Using a heatproof spatula, transfer cookies directly onto the cooling rack. Allow to cool for 1 hour. Storing instructions below. Enjoy!

    I cannot wait to make these. I have made so many of your recipes for my 2 year old grand daughter who has terrible food allergies and eczema, which thankfully we have healed with dietary changes. Your recipes have saved us! I have made a ton of them and they are all fabulous. Even our non food allergy family members love everything I have made, including myself. I love that they are such a better alternate to my grandmother’s recipes that had loads of butter and sometimes shortening! Yes, they are wonderful but not something you should eat very often. Thank you from the bottom of my heart.

    These are really lovely. The addition of the nutmeg and cloves makes them a little different from the usual oatmeal raisin cookie recipe. We’ll be making these again.

    Since the latter half of Dec., I’ve made this ABSOLUTELY AMAZING recipe a few times for me and some of my friends! These oatmeal cookies are truly AMAZING and SOOO DELICIOUS!!! I think this is my #1 favorite oatmeal cookie recipe of yours so far. Of course, that may change as I start to make other oatmeal cookie recipes that you’ve developed. ๐Ÿ™‚ When I made this recipe for the first time, of course, I went overboard with spices (ginger, cinnamon & clove) dried fruits (cranberries & raisins) and nuts/seeds (walnuts & pumpkin seeds) as usual. Your WONDERFULLY FLEXIBLE recipe is very accommodating! I baked for 16 minutes, and my cookies had the texture of shortbread cookies which I happen to love! They were SOOO AMAZINGLY DELICIOUS!! THANK YOU VERY MUCH, Demeter!! ๐Ÿ˜€

    I made these tonight and they are FANTASTIC. I love all the spices, and it tastes exactly as an oatmeal raisin cookie should. I skipped the coconut sugar and used cashew butter instead of almond butter. I baked mine for 12 minutes and then let them cool for over an hour. They turned out just amazing. Thank you for this great recipe!

    I made this recipe using quick oats because I didn’t have rolled oats on hand. I didn’t have cloves so I used ground Cardamom. Then, I added handful of unsweetend shredded coconut and a spoon of almond flour. They turned out AMAZING!! I baked them for 13 minutes and I felt they were little bit more softer than chewy so I left them in the oven for 10 minutes and then took it out. They were not chewy afterwards but tasted great. So next time, I would just take them out and they will get little hard as they cool and it will be chewy. But all of the flavors were really good together. I loved it. Thank you sooooo much Demeter.

    I substituted honey for the maple syrup and cut the sugar back and they are even better! Chewy, more attractive and better flavor. Try it, if you can eat honey. Also, juice sweetened and dried cranberries and walnuts make a great addition.
