Did I tell you we celebrated Erik’s birthday and my sister Penny’s birthday this month? 🙂 You know, I used to celebrate all of my loved one’s birthdays on the blog until I realized that, like, every other recipe was a birthday tribute and I could for-realsies get caught potentially repeating the same compliment about one loved one to another.

- Vegan Chocolate Chips or Sugar-Free Chocolate Chips – two of my favorite chocolate chips. Both melt so well and taste fantastic. One is for my lower sugar days, and the other is for my sweet indulgence days. 🙂
- Medium Cookie Scoop – hands-down, my favorite cookie scoop of all time. I’ve gone through so many cookie scoops–this is the only one that I’ve bought again and again. Why did I buy it again? Not because the old ones broke, but because I finally felt trust again for a good cookie scoop, and felt like I could stock up. Plus, on a given recipe testing day, I’m baking over 100 cookies. (Yep, the scoop is that good.)

I love this recipe! I make it often but I was wondering if I could swap the almond butter for peanut butter? Let me know if you tried it and how it turned out. Thanks!
So glad you enjoyed it Amanda! Yep, you can swap AB for PB, it’ll just give the cookies more of a peanut butter flavor. Happy baking!
