Guess what? New energy bite recipe today! Woot woot! Yes, I still insist on using “woot woot.” That is, until someone, anyone can give me a better substitute. Alright fine, what about yay!!! Or… gadzooks!!!

Wait a minute, what the fajitas does gadzooks mean anyway? Does it mean something just went awry? What if I just discovered the secret to alchemy or something. You know, no biggie. And that was literally the first thing I said: “gadzooks!” So instead of celebrating my totally awesome ability to now make gold from anything or whatever, I shall be known as the Gadzooks Gal.

Alright, we’re nixing gadzooks. Like, right now. See! I need some stylish, hyper cool synonym for “woot woot” that won’t somehow taint my future would-be legacy of being able to manufacture gold. Never mind that I could probably totally give people enough gold to make gadzooks cool again.

Maybe then it’d be known as “goldzooks!” Say it, and you get a gold bar. Okay now I totally have Oprah in my head saying, “You get a gold bar! And you get a gold bar! And you get a gold bar!!”

And now you have legit, solid gold proof that these No Bake Gluten Free Almond Joy ENERGY bites work. I mean, did you just read all of that? Maybe these should be called too-much energy bites. All better! Nice and chillaxed now… Alright, fine, I didn’t just go do that. But I so wish I had a trampoline! Have you ever seen that scene in Fried Green Tomatoes where one of the main characters is jumping on this mini, one person-only, individual trampoline? So cute, so handy! And it would be great justification for eating more of these No Bake Gluten Free Almond Joy Energy Bites! Also, even more justification for eating a nice, big batch of these! 😉

See, and you thought I lost track of what we were talking about. Pshaw! Of course I didn’t. 😉 And now hopefully you’re reading this and thinking about how wonderfully effective these no bake bites are at stimulating the energy levels.

Description

No Bake Gluten Free Almond Joy Energy Bites (V, GF, DF): a one bowl recipe for protein-packed energy bites bursting with Almond Joy flavors, made with simple ingredients. Vegan, Gluten-Free, Dairy-Free, Protein-Packed.


Ingredients

Scale

Dry Ingredients

  • ¾ cup unsweetened coconut, shreds or flakes
  • 1/2 cup gluten free rolled oats
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons ground flaxseed
  • ¼ cup assorted vegan chocolate chips (mini and regular)
  • ¼ cup sliced almonds, chopped

Wet Ingredients

  • ¾ cup natural, unsalted creamy almond butter (mine is very liquidy)*
  • ¼ cup pure maple syrup

For Rolling

  • 1/3 cup unsweetened coconut, shreds or flakes

Instructions

  1. In a large bowl, mix together all of the dry ingredients: coconut, oats, cocoa powder, flax, chocolate chips and almonds. Add almond butter and maple syrup.
  2. Using a sturdy spatula, stir and fold until well incorporated.
  3. Scoop mixture into your hands and roll into bites. While bites are still moist, roll and coat in coconut. Reshape into balls, as needed. Enjoy! Storing instructions below.

Notes

– Adapted from my No Bake Double Chocolate Coconut Energy Bites.
– *Natural almond butter works best for this recipe; the measurements were calculated based on the very drippy, liquidy nature of natural AB (the kind I use only has 1 ingredient: almonds).
– Store in an airtight container for up to 2 weeks.

    Sorry me again. I asked the question about a sub for the oats as I can’t have grains/seeds for health reasons. Would almond or coco unit flour work as a sub? Ty!

    I am TOTALLY an addict to protein-packed, no-bake clean sweets like those! Plus they look EXTRA tasty! That is the kind of snack I carry everywhere for those sudden **red zone** “Feed me NOW” cravings I get allll the time. Energy bites saved my life quite a few times and they never get old, keep em coming!

    YUM! I never say no to energy bites, and considering I’ll be finishing the ones I have in the freezer pretty soon, these will definitely be on the top of my to-do list! As for other flavors…I’m always a sucker for anything blueberry, especially with cheap berry season coming up!

        Can you suggest a sub for the oats? I’m on an anti-inflammatory diet that doesn’t allow grains/seeds. Would almond or coconut flour work?

    Hahaha! Oh lady, you cannot nix gadzooks! Though, am down with goldzooks – especially if I get a gold bar for saying it! Oh…and btw – are you providing said gold bar? Cos if you are could I be so bold as to ask for a chocolate tinged gold bar? 🙂 Speaking of gold bars – have you tried the golden turmeric bar from Trader Joe’s? I got my hands on one at an Easter Potluck and woa – so so good – and speaking of so so good – lady, these No Bake Gluten Free Almond Joy ENERGY bites sound amazeballs! BTW – I used to have one of those mini trampolines – then I sold it…womp womp (not to be confused with woot woot – though the person who bought it might be saying that latter one…

    Nope, no way–now that you put the Gadzooks Gal thing out there you can’t just nix it that easily! I won’t allow it because it is way to much fun to say. I mean I think you should just go ahead and change your domain name tomorrow before someone else snatches it up. I still type “woot woot” all the time (and then sometimes delete to retain what little bit of coolness I have, but not always). It falls into the same category as “cray cray” in my opinion. And these little bites look so good it’s cray cray…WOOT!! <– No regrets about that last sentence, no-bake coco-nutty bites warrant it. Well I worked out like crazy hard this morning (idk why, just randomly felt like kicking off monday bad*ss style) so that warrants a big batch all for me I think. No such thing as too much energy in a world where trampolines exist. And very fine choice on the flakes instead of shreds I must say–a little extra coconut classy. I vote the next energy bite be a fruity one please.. Happy monday my GG!. xoxo
