5 Ways to Enjoy the Best Vegan Gluten Free Chocolate Chip Cookies

Cookies are one of my favorite desserts of all time. What’s not to love? Thin & crispy, thick & chewy, soft-baked and so delightful, plus, all of that in a portable little cookie package? I mean, you could basically carry cookies around in your pocket and no one would be the wiser, ya know what I mean? (Not that I’ve ever done that or anything.) So what could be better than learning how to make vegan gluten free chocolate chip cookies (totally portable) 5 different & delectable ways? Let’s bake this!

Ingredients You Need to Make Vegan Gluten Free Chocolate Chip Cookies

Nearly every vegan gluten free chocolate chip cookie recipe calls for the same basic ingredients, as listed below. You can try substituting some of the ingredients, but keep in mind that the best results always come when you stick to the recipe. Happy experimenting!

  • Gluten free oat flour
  • Coconut oil
  • Flax eggs
  • Coconut sugar, maple syrup
  • Salt, vanilla extract
  • Vegan chocolate chips

How to Make Vegan Gluten Free Chocolate Chip Cookies

I had the most fun learning how to make vegan gluten free chocolate chip cookies! While each way is just a bit unique and wonderfully different, there is a general way of making all of these that’s simple and easy. Be sure to click on each link below to learn how. For the base recipe, scroll down to the recipe card.

Preheat

Before you even prep your ingredients, make sure to preheat the oven. Then, line a baking sheet with parchment paper and prep the flax egg(s). Then, move onto the rest of the recipe.

Whisk the Dry Ingredients

Add all dry ingredients to a large mixing bowl and whisk it all together until it’s very well mixed.

Whisk the Wet Ingredients

Add all of the wet ingredients to a medium mixing bowl and whisk it together with a clean whisk until you get a cohesive wet mixture. 

Combine

Now, combine the two components: wet and dry mixture. Stir, fold and whisk everything together until you get a dough. Now, fold in your add-ins.

Chill for some recipes

Some of the vegan gluten free cookies below will require chill time for delicious thickness in each cookie. Others will not because the dough is already thick as-is, or we want a beautiful spread to result in thin chocolate chip cookies. 😉

Scoop

Grab a cookie scoop, then scoop and drop balls of vegan gluten free cookie dough onto the prepared baking sheet. Press toppings into each cookies and flatten if the recipe calls for it.

Ingredients

Dry Ingredients

Wet Ingredients

  • ½ cup melted coconut oil
  • ½ cup + 2 tablespoons coconut sugar
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, whisked together, set for 15 minutes)
  • 1 ½ teaspoons pure vanilla extract
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  2. In a medium bowl, whisk together all the dry ingredients.
  3. In a large bowl, whisk together all the wet ingredients, until well mixed.
  4. Add the dry mixture to the wet mixture. Whisk as long as you can. Switch to stirring and folding with a rubber spatula until no flour patches remain. Fold in chocolate chips.
  5. Cover bowl and chill in the freezer for about 20 minutes, until firm throughout. If necessary, allow to thaw at room temperature just until it’s soft enough to scoop, but still very firm and chilled.
  6. Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared cookie sheet, evenly spaced apart. Cookies will spread a bit. Using a spoon, flatten the cookies about halfway for thick cookies, or flatten considerably for just slightly thick cookies.
  7. Bake for 12-16 minutes. Mine took 14 minutes. Optionally, press chocolate chips into the tops of cookies. Allow cookies to cool on the sheet for about 10 minutes (on a cooling rack). Transfer cookies directly onto a cooling rack to cool completely before storing. Storing instructions below. Enjoy!

Notes

*If using homemade oat flour, make sure to sift the flour to remove coarse bits of oats that could create grainy cookies.

Storing Instructions: Store in an airtight container for 1-2 weeks.

Freezing Instructions: Store in a freezer-friendly container. Keep for up to 1-3 months. Thaw at room temperature for about 10-20 minutes before enjoying. Or, warm in the microwave for about 5-10 seconds.
