What’s your favorite fall activity?

Year after year, I tell Erik that we’ve got to go apple picking, pumpkin patching (oh, you know what I mean), and visit a haunted house, then make homemade apple cider & paleo apple crisp and five loaves of gluten free vegan pumpkin bread.

All in one day.

We’d start bright and early, at 4am, because the pumpkin loaves need to cool. Then, I’d remember that I can totally squeeze in making 3 batches of my oil-free pecans, a couple dozen pumpkin chocolate chip cookies, then 2 batches of my skillet roasted cinnamon maple pecans (for gifts and eating, you see)…

And Erik would be, again, stuck with having to peel and core all the apples (for the crisp and the apple cider). Then we’d have to pick out all the fall-appropriate outfits for the pumpkin patch and haunted house.

But then reality hits and I’m like… I wanna sleep in!! And Erik’s too groggy to even respond. Except… I think I hear him saying “Can I have one more cookie?”

How to Make Maple Pecan Paleo Granola 

Learn how to make maple pecan paleo granola like a BOSS! Just add all the paleo granola ingredients except maple syrup to a bowl. Stir until well mixed, then add in the maple syrup. Fold until clusters form. Pour onto the prepared baking sheet and bake. Cool & enjoy! 

Is Granola Paleo?

This granola is paleo! As for the other granolas, maybe it is, maybe it isn’t. Hehe! This paleo granola is also grain-free, flourless, refined sugar-free, vegan and dairy-free!

Best Tools for Homemade Maple Pecan Granola

  • Finely Ground, Blanched Almond Flour – a fantastic ingredient to use in paleo baking, and one of the reasons this paleo granola has such wonderful clusters.
  • Maple Extract – the key ingredient to turbo-charging the maple flavor in this recipe. It adds that signature maple aroma that you think of when you crave maple goodies (or smell those amazing maple scented candles). Highly recommended.
  • Unbleached Parchment Paper – I use this all the time to line my baking sheets. Prevents sticking, and is easy to clean up.
  • Coconut Sugar | Maple Syrup – two great paleo sweeteners with a wonderful taste.

Maple Pecan Paleo Granola

Instructions

  1. Preheat the oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
  2. Add all ingredients except maple extract and maple syrup to a large bowl. This is the wonderfully aromatic maple extract that I use. Stir until well mixed.
  3. Add maple syrup and maple extract. Using a rubber spatula, fold until clusters form and mixture is well mixed.
  4. Pour onto the prepared baking sheet. Create an even layer. Make a few pockets throughout to let air through to crisp up granola.
  5. Bake for 18-20 minutes. Using a heatproof spatula, gently flip granola, making sure to keep clusters intact. Bake for an additional 4-6 minutes, until edges are a deep golden brown and granola is just slightly soft. Mine took a total of 24 minutes. Granola will crisp up while cooling.
  6. Place baking sheet on a cooling rack. Allow to cool for about 30 minutes, or until completely cooled. Optionally, fold in 1 cup Oven Roasted Paleo Candied Pecans. Enjoy! Storing instructions below.

  1. This recipe is so easy that I use it as a base model to make granola out of whatever nuts I have on hand! Today I used a combo of walnuts, pecans and pumpkin seeds. I only had vanilla extract on hand that last few times I made it, so it’s all I’ve ever used and it works great in place of the maple extract- different flavor of course but I’m sure just as yummy! You really can’t get any better than this!

  4. Ha! I’m the same way. I want to do all the fall things and somehow pack it into one day only it’s impossible! I love that this granola is authentically fall and yet easy for those lazy mornings. It came out in great chunky clusters. Yum!! Will make this again and again.
