Description

4 Ingredient Coconut Almond Pecan Paleo Granola (V, GF): a quick ‘n easy recipe for crunchy, salty & sweet granola packed with whole ingredients. Paleo, Vegan, Healthy, Gluten-Free, Dairy-Free, Refined Sugar-Free.

Ingredients

Units Scale
  • 1 cup unsweetened coconut flakes
  • 3/4 cup almonds, roughly chopped*
  • 3/4 cup pecans, roughly chopped*
  • 1/8 teaspoon salt (optional)
  • 3 tablespoons pure maple syrup

Instructions

  1. Preheat the oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
  2. Add coconut, almonds, pecans and salt (if using) to a large bowl. Stir until well mixed.
  3. Add maple syrup. Stir and fold until coconut and nuts are fully coated.
  4. Pour onto the prepared baking sheet. Spread granola into an even layer, with empty pockets at regular intervals to let air through. Using a spoon, create small piles of granola—these will become clusters after baking.
  5. Bake for 10 minutes. Using a heatproof spatula, flip granola to evenly crisp the other side. Bake for an additional 5-10 minutes. Mine took a total of 20 minutes.
  6. Place baking sheet on a cooling rack. Allow to cool for about 30 minutes, or until completely cooled. Enjoy! Storing instructions below.

Notes

– Adapted from my 5 Ingredient Homemade KIND Nut Bars.
– *I like to leave some nuts completely whole–this results in bigger, tastier clusters.
– Here’s the unsweetened coconut flakes that I use in this recipe.
– Storage notes: Store in an airtight container for 1-2 months at room temperature.
– More easy snack recipes: peanut butter cookie energy bars, no bake brownie energy bites, banana nut muffins.
