The last few months, Erik and Iโve been on an odyssey to find the best store-bought healthy granola bars. Yes, even we must buy store-bought granola bars from time to time. Like, if we donโt take a break from the kitchen, weโll hate the kitchen, ya know?
Anyway, itโs been a whole thing! Like how hard is it to make a healthy granola barโฆum, healthy? Turns out, really hard. Lol. So today I thought itโd be awesome to share a healthy homemade granola bar thatโs healthy, vegan, dairy-free, refined sugar-free and gluten free. Yes!!

How to Make this Quick & Easy Healthy Granola Bars Recipe with Blueberries!
Best of all? This healthy homemade granola bars recipe is quick & easy to make. Simply whisk together all dry ingredients in one bowl, then whisk together all wet ingredients in another. Combine, then fold in blueberries. Pour mixture into a prepared pan and smooth into an even layer. Bake, cool and slice your homemade granola bars. Thatโs it!

These homemade blueberry granola bars taste AWESOME. Hehe. Okay, that wasnโt enough of an actual description. Soโฆ theyโre chewy & satisfyingly dense, with a lightly crispy texture. The sweetness of these healthy granola bars is balanced out with nuttiness from ยผ cup of ground golden flaxseed and 1 whole cup of nuts and a hint of natural almond butter. So. Good.

Healthy Homemade Blueberry Granola Bars (Vegan, GF)

Ingredients
Dry Ingredients
- 1 cup nuts, chopped (I used pecans, almonds, walnuts, peanuts)
- ยฝ cup gluten free rolled oats
- ยผ cup dried blueberries
- ยผ cup golden ground flaxseed
- ยผ teaspoon salt, optional
Wet Ingredients
- 1 tablespoon coconut sugar
- 2 tablespoons melted coconut oil
- 1 tablespoon unsalted, natural creamy almond butter
- 3 tablespoons pure maple syrup
Optional Topping
- 1 teaspoon dried blueberries
Instructions
- Preheat oven to 325ยฐF. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later. You can also use this Energy Bar Mold to make rectangular granola bar-style bars.
- Add all dry ingredients to a large bowl: nuts, oats, dried blueberries, flaxseed, and salt (if using). Stir until well mixed.
- Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter and maple syrup. Whisk until well incorporated.
- Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.
- Pour the mixture into the prepared baking pan. Using the spatula, nudge the mixture until loosely and evenly spread out. Then, use the spatula to press the mixture firmly down into an even, very tightly-packed layer. Optionally, press blueberries into the bars.
- Bake for 22-27 minutes. Mine took 25 minutes.
- Place baking pan onto a cooling rack to cool for about 30 minutes, or until completely firm. After, lift bars and parchment paper onto the cooling rack to finish cooling for 1-2 hours. Slice and enjoy! Storing instructions below.

- Storage Notes: Store in an airtight container for 1-2 months at room temperature.

Loved them as did I friend I shared some with. How do you advise to chop the nuts? I used a cutting board and a paring knife. Is there an easier and more uniform way without them turning into nut butter? Thanks
Hi Kathy, a larger knife, like a chefโs knife, would be faster and more even overall. Otherwise, you can purchase chopped nuts for a uniform process. Enjoy!

Dried blueberries are a little difficult to find in our local supermarket, what other dried fruit would you suggest that would complement all the other ingredients in this beautiful recipe? ๐
Hi Nancy, you could try any kind of dried fruit. ๐ Perhaps chopped dried cranberries, raisins or even chopped dried apricots. Just make sure the dried fruit bits are small enough that they can be easily incorporated into the bars without causing them to crumble. ๐ Canโt wait to hear what you think!

This morning I made your blueberry granola bar recipe and it tasted amazing! After I let it cool on the rack I sliced it and noticed that it was very crumbly. Very much like clusters, What can I do differently next time I make it so it looks like yours?๐
Hi Nancy! Hm, itโs hard to say from afar like this but in general, make sure to pack the pan very tightly before cooking and try letting it cool in the pan on the rack instead of taking it out to cool. Hope this helps!
