No Bake Peanut Butter Coconut Balls: this healthy energy bites recipe yields chewy, sweet ‘n nutty vegan protein balls with just 6 ingredients! Easy, Gluten Free, Protein Balls!

Instructions

  1. In a large bowl, whisk together the wet ingredients: peanut butter and maple syrup.
  2. Add in all of the dry ingredients: coconut, oats, flax and peanuts.
  3. Using a rubber spatula, stir and fold until very well mixed.
  4. Using a small or medium cookie scoop, scoop mixture into your hands and roll into bites. Enjoy!

  1. They look amazing, making them now my 15 mns lovessss peanut butter but turned out im out of flaxseed ? Any suggestions? Also using jif peanut butter and no syrup so will make with honey.






    1. Hi Sally! I’m so excited that you’re going to make these. 🙂 As for the flaxseed: I’m not sure, I’ve never made this recipe without it. However, since you’re using Jif instead of natural, drippy peanut butter, it might just work out (since Jif is so much thicker and drier than natural PB).   6. Sooo… I’ve neither ever made homemade peanut butter nor eaten peanut butter and coconut together and all of those things are my jam. I definitely need to get on it! It really is impossible to eat peanut butter without feeling instantly better and there’s absolutely nothing wrong with taking a spoon to a jar and hiding in the closet until the cracks of your heart are filled. It’s not weird. I repeat. It’s not weird.

How do you make something so delicious be so healthy too? Scrumptious. Of course, I’ll have to use natural p.b. but I’m getting used to it. I did a taste contest on Peanut Butter in college and held out 5 spoons of different types to see which was would be the favorite. Peter Pan won hands down, Ha!!!
