When I was a little kid, I thought pistachios were the weirdest thing. Like, why are they so green? What’s up with the whole having to peel off the shell business? Why are they not peanuts or… even those weird things I just ate for the first time ever: almonds?!

And, again, why are they so green??

My, how things change as we age. Hehe. I still think they’re crazy green, but I can appreciate the beauty of its vibrant green hue. Like, nothing artificial and you’re poppin’ that much?! NICE. And…who’s your stylist? 😉

How to Store Chocolate Pistachio Gluten Free Vegan Snack Bars

Storing these healthy vegan snack bars is easy! Use an airtight container to keep your snack bars fresh. Store them at room temperature, out of direct sunlight and away from heat sources.

If freezing: store in a freezer-friendly container for 1-2 months. Allow vegan snack bars to thaw at room temp for 10-20 mins before enjoying!

Chocolate Pistachio Healthy Vegan Snack Bars (Gluten Free)

Chocolate Pistachio Healthy Vegan Snack Bars (GF): soft & chewy gluten free vegan snack bars packed with chocolate & pistachios! The perfect nutty snack—easy to make, simple ingredients for the BEST vegan snack bars! Dairy-Free, Refined Sugar-Free.

Ingredients 

Dry Ingredients

Wet Ingredients

Instructions 

  • Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later.
  • Add all dry ingredients to a large bowl: pistachios, pecans, oats, chocolate chips, flaxseed, and salt, if using. Stir until well mixed.
  • Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter, maple syrup, almond extract. Whisk until well incorporated.
  • Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.
  • Pour the mixture into the prepared baking pan. Using the spatula, press mixture firmly down into an even, very tightly packed layer.
  • Bake for 22-27 minutes. Mine took 25 minutes.
  • Place baking pan onto a cooling rack to cool for about 30 minutes, or until completely firm. After, lift bars and parchment paper onto the cooling rack to finish cooling for 1-2 hours. Slice and enjoy! Storing instructions below.

    This looks amazing
    I was wondering if I could avoid using the oil in any way?
    Can I not add or add something in its place?

    Also if not, can I use canola or olive oil?

      Hi Liz! I wouldn’t recommend removing the oil completely, but I have had readers use olive oil in some of my recipes before with good results. I haven’t tried it myself, so if you do let me know how it goes!

    I love the fact that these are gluten and dairy free! They were super easy to make and both my daughter and I could eat them. Bonus points for that! Of course, how can you go wrong with almond butter, pistachios and dark chocolate!!! And perfect for that energy boost for all that Christmas shopping.
