When I was a little kid, I thought pistachios were the weirdest thing. Like, why are they so green? What’s up with the whole having to peel off the shell business? Why are they not peanuts or… even those weird things I just ate for the first time ever: almonds?!

Chocolate Pistachio Healthy Vegan Snack Bars (GF): soft & chewy gluten free vegan snack bars packed with chocolate & pistachios! The perfect nutty snack—easy to make, simple ingredients for the BEST vegan snack bars! Dairy-Free, Refined Sugar-Free.
Ingredients
Dry Ingredients
- 3/4 cup pistachios, shelled & chopped
- 1/4 cup pecans, chopped
- 1/2 cup gluten free rolled oats
- 1/4 cup vegan mini chocolate chips
- 1/4 cup ground flaxseed
- 1/4 teaspoon salt (optional)
Wet Ingredients
- 1 tablespoon coconut sugar
- 2 tablespoons melted coconut oil
- 1 tablespoon unsalted, natural creamy almond butter
- 3 tablespoons pure maple syrup
- 1/2 teaspoon pure almond extract
Instructions
- Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later.
- Add all dry ingredients to a large bowl: pistachios, pecans, oats, chocolate chips, flaxseed, and salt, if using. Stir until well mixed.
- Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter, maple syrup, almond extract. Whisk until well incorporated.
- Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.
- Pour the mixture into the prepared baking pan. Using the spatula, press mixture firmly down into an even, very tightly packed layer.
- Bake for 22-27 minutes. Mine took 25 minutes.
- Place baking pan onto a cooling rack to cool for about 30 minutes, or until completely firm. After, lift bars and parchment paper onto the cooling rack to finish cooling for 1-2 hours. Slice and enjoy! Storing instructions below.

Question: You mention it takes 22-27 minutes and yours took 25 – what’s the best way to know when they’re perfectly done? What should they look like or what kind of test should I do? So looking forward to making these! : )
The bars should be a bit golden at the edges, and the top should have dried up a bit (the wet ingredients have dehydrated/baked “away”). Other than that, try out about 25 minutes, and adjust for the next batch if you find them too dried or too soft, as all ovens vary. 😉 Can’t wait to hear what you think!
Could you substitute hemp hearts for the flaxseed? Just because I have that on hand already.

These came out great! Two questions: 1) I followed your instructions on cooling for 1-2 hours before slicing but they cumbled when slicing. The ingredients are on the expensive side (pistachios, especially) so I would like to make them again since I have all the ingredients. I followed exactly. 2) Please provide the sugar content.

Hi Robin! 1) Try chopping your nuts up more finely. Larger chunks could cause crumbling. 2) Thank you! In terms of calorie content, I try to calculate & provide as many as possible for the most popular recipes. I’ll backtrack & add in as many as I can, but it’s not possible to do them all because of time constraints. Hope you can understand. Happy baking!

Hi Liz! I wouldn’t recommend removing the oil completely, but I have had readers use olive oil in some of my recipes before with good results. I haven’t tried it myself, so if you do let me know how it goes!
