When I was a little kid, I thought pistachios were the weirdest thing. Like, why are they so green? What’s up with the whole having to peel off the shell business? Why are they not peanuts or… even those weird things I just ate for the first time ever: almonds?!

And, again, why are they so green??

My, how things change as we age. Hehe. I still think they’re crazy green, but I can appreciate the beauty of its vibrant green hue. Like, nothing artificial and you’re poppin’ that much?! NICE. And…who’s your stylist? 😉

Storing these healthy vegan snack bars is easy! Use an airtight container to keep your snack bars fresh. Store them at room temperature, out of direct sunlight and away from heat sources.

If freezing: store in a freezer-friendly container for 1-2 months. Allow vegan snack bars to thaw at room temp for 10-20 mins before enjoying!

Instructions

  1. Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later.
  2. Add all dry ingredients to a large bowl: pistachios, pecans, oats, chocolate chips, flaxseed, and salt, if using. Stir until well mixed.
  3. Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter, maple syrup, almond extract. Whisk until well incorporated.
  4. Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.
  5. Pour the mixture into the prepared baking pan. Using the spatula, press mixture firmly down into an even, very tightly packed layer.
  6. Bake for 22-27 minutes. Mine took 25 minutes.
  7. Place baking pan onto a cooling rack to cool for about 30 minutes, or until completely firm. After, lift bars and parchment paper onto the cooling rack to finish cooling for 1-2 hours. Slice and enjoy! Storing instructions below.

  1. Question: You mention it takes 22-27 minutes and yours took 25 – what’s the best way to know when they’re perfectly done? What should they look like or what kind of test should I do? So looking forward to making these! : )

    1. The bars should be a bit golden at the edges, and the top should have dried up a bit (the wet ingredients have dehydrated/baked “away”). Other than that, try out about 25 minutes, and adjust for the next batch if you find them too dried or too soft, as all ovens vary. 😉 Can’t wait to hear what you think!

  2. Thank you for posting this recipe! I can do all of the ingredients with the exception of oats. Is it possible to sub something else? Sorry to be one of those people who want to change things…but perhaps I can sub a certain flour? I know they won’t be as chewy and that’s okay! Thanks so much!

  3. These came out great! Two questions: 1) I followed your instructions on cooling for 1-2 hours before slicing but they cumbled when slicing. The ingredients are on the expensive side (pistachios, especially) so I would like to make them again since I have all the ingredients. I followed exactly. 2) Please provide the sugar content.

    I really like your recipes and how you explain every detail but please provide calorie content.

    1. Hi Robin! 1) Try chopping your nuts up more finely. Larger chunks could cause crumbling. 2) Thank you! In terms of calorie content, I try to calculate & provide as many as possible for the most popular recipes. I’ll backtrack & add in as many as I can, but it’s not possible to do them all because of time constraints. Hope you can understand. Happy baking!

    Can I not add or add something in its place?

    Also if not, can I use canola or olive oil?

  6. I love the fact that these are gluten and dairy free! They were super easy to make and both my daughter and I could eat them. Bonus points for that! Of course, how can you go wrong with almond butter, pistachios and dark chocolate!!! And perfect for that energy boost for all that Christmas shopping.
