These no bake peanut butter coconut balls are super simple, quick ‘n easy to make! They’re the best vegan, gluten-free, dairy-free healthy energy bites!
- Step 1: Whisk together creamy peanut butter and maple syrup.
- Step 2: Add in coconut, gluten free oats, flaxseed and chopped peanuts.
- Step 3: Fold together until thoroughly mixed.
- Step 4: Scoop, drop and roll the coconut peanut butter mixture to make healthy energy bites! Enjoy.

No Bake Peanut Butter Coconut Balls – Vegan Gluten Free Protein Balls!
Ingredients
Wet Ingredients
- ¾ cup smooth peanut butter*
- ¼ cup pure maple syrup
Dry Ingredients
- ¾ cup unsweetened coconut shreds or flakes
- ¾ cup gluten free rolled oats
- ¼ cup ground flaxseed
- ¼ cup finely chopped peanuts or desired add-ins, chocolate chips, raisins, etc.
Instructions
- In a large bowl, whisk together the wet ingredients: peanut butter and maple syrup.
- Add in all of the dry ingredients: coconut, oats, flax and peanuts.
- Using a rubber spatula, stir and fold until very well mixed.
- Using a small or medium cookie scoop, scoop mixture into your hands and roll into bites. Enjoy!

- *Natural peanut butter works best for this recipe; the measurements were calculated based on the very drippy, liquidy nature of natural PB (the kind I use only has 1 ingredient: peanuts).
- Store in an airtight container for up to 2 weeks.
- Freezing Instructions: these bites keep well in the freezer for up to a month.

They look amazing, making them now my 15 mns lovessss peanut butter but turned out im out of flaxseed ? Any suggestions? Also using jif peanut butter and no syrup so will make with honey.
Hi Sally! I’m so excited that you’re going to make these. 🙂 As for the flaxseed: I’m not sure, I’ve never made this recipe without it. However, since you’re using Jif instead of natural, drippy peanut butter, it might just work out (since Jif is so much thicker and drier than natural PB). Yesssssss, peanut butter is my number one food. Like, if I could only bring one food to a desert island it would be peanut butter. I firmly believe that any food is made better with peanut butter.
