- Step 1: Whisk together creamy peanut butter and maple syrup.
- Step 2: Add in coconut, gluten free oats, flaxseed and chopped peanuts.
- Step 3: Fold together until thoroughly mixed.

No Bake Peanut Butter Coconut Balls – Vegan Gluten Free Protein Balls!
Ingredients
Wet Ingredients
- ¾ cup smooth peanut butter*
- ¼ cup pure maple syrup
Dry Ingredients
- ¾ cup unsweetened coconut shreds or flakes
- ¾ cup gluten free rolled oats
- ¼ cup ground flaxseed
- ¼ cup finely chopped peanuts or desired add-ins, chocolate chips, raisins, etc.
Instructions
- In a large bowl, whisk together the wet ingredients: peanut butter and maple syrup.
- Add in all of the dry ingredients: coconut, oats, flax and peanuts.
- Using a rubber spatula, stir and fold until very well mixed.
- Using a small or medium cookie scoop, scoop mixture into your hands and roll into bites. Enjoy!

- *Natural peanut butter works best for this recipe; the measurements were calculated based on the very drippy, liquidy nature of natural PB (the kind I use only has 1 ingredient: peanuts).
- Store in an airtight container for up to 2 weeks.

Are you using freshly grated coconut, bagged from the grocery store, or dried coconut like from my food co-op. Three choices which would probably have very different results. Thanks.

Hi Nicolette, that might work. Try adding in more oats or coconut until you reach the dryness/consistency you like. They *may* have an issue holding together, but I’m not certain since I haven’t tried it myself. Good luck!
I just made these tonight and all i can say is WOW….. this is a keeper. Even my husband said he loved them. I did not have flaxseed so I used hemp hearts and it worked out perfect.

Can I use regular pb on these in case that I can’t find any natural pb in the grocery? Is it okay if I gonna make this without flax?can’t find any. Thank you.
Hi Maria! I think it will work, but it might just be a bit thicker than expected. However, without the flax (which absorbs a lot of the moisture in this recipe), it might just work. I’m not 100% sure though, so go into it with an open mind–you might need to adjust to your liking. Can’t wait to hear how they turn out! 🙂
Whipped these up this morning, they look delicious! Haven’t tried them yet, but I have faith. Besides, how can you go wrong with peanut butter and coconut?! I used a little unsweetened applesauce just to make them stick together better and put some leftover chocolate chips in mine. Thank you! .

I made these last night..oh man are they yummy! My husband even likes them and he is not big on pb. I added pecans and chocolate chips instead of peanuts and my mixture was a little too wet so I added a touch more coconut….these are going in the recipe box
