How to Make No Bake Paleo Chocolate Almond Butter Bars

These no bake paleo chocolate almond butter bars are so easy to make! First, stir together your almond butter, maple syrup and coconut flour until thickened. Pour that almond butter mixture into a pan and smooth it out. Then, melt & stir together your paleo vegan chocolate and almond butter. Pour that delicious paleo chocolate over your almond butter layer. Smooth it out, then chill until firm. Slice and enjoy your no bake paleo almond butter bars! Best paleo treats ever!

No Bake Paleo Chocolate Almond Butter Bars – Easy Paleo Dessert Recipe!

No Bake Paleo Chocolate Almond Butter Bars: this easy paleo dessert recipe yields deliciously thick no bake almond butter bars topped with velvety paleo chocolate. It’s the best quick & simple paleo sweets recipe! Dairy-Free, Gluten-Free, Healthy, Vegan, Refined Sugar-Free.

Ingredients 

Almond Butter Layer

Paleo Chocolate Topping

Instructions 

  • Line an 8-inch square baking pan with parchment or wax paper. Clear some space in the freezer for this pan. Set aside at room temperature.
  • Make the Almond Butter Layer: In a medium bowl, add Almond Butter Layer ingredients. Using a rubber spatula, stir and fold until thoroughly mixed and thickened, with no flour patches remaining.
  • Transfer the almond butter mixture into the prepared baking pan. Using the rubber spatula, smooth into an even layer. Set aside.
  • Make the Paleo Chocolate Topping: Use the double boiler method or the following. Add Chocolate Topping ingredients to a medium, microwave-safe bowl. Heat in 20-second increments until chocolate is softened and melty. Stir in between heating, until smooth.
  • Pour the chocolate mixture over the almond butter filling. Using a clean rubber spatula, smooth chocolate into an even layer. Tap the pan a few times to help even out the chocolate.
  • Transfer pan to freezer. Freeze for 45-60 minutes, or until hardened. Remove from freezer and slice into 16 squares or 32 rectangular bars. Enjoy! Storing instructions below.

    This is awesome! I made my own chocolate : 3/4 cup coconut oil, 3/4 cocoa powder, 1/3 cup pure maple syrup, 1 tsp of vanilla. I got the grind your own almond butter at the store, so it was alittle chunky, but this turned out awesome!!!!

    I made these today and I’m sad that I find them bland. 🙁 I don’t want to throw them out (almond butter isn’t cheap!). Any thoughts?

      Hi Jamie, so sorry to hear that! No one’s ever told me that these are bland. 🙁 Maybe try adding in a pinch of salt, or increasing the amount of chocolate in the topping?

      There might be a problem with the almond butter that you used. If you make them with homemade almond butter, they are anything but bland, they are rich and delicious! Cant seem to get enough of them! Its so much cheaper to make your own almond butter and its really easy too. If you roast the almonds before making the butter, it makes it super delicious? I added a bit of coconut oil to the almond butter because it was bit dry and then because I didn’t have maple syrup on hand, used wild honey as a substitute. My whole family absolutely love them!

      I think these are going to go over well!! They are super tasty and took me under 5 minutes to throw together. I used only 1/3 cup maple syrup, 1/4 cup cassava, 1/3 cup almond flour, and 1/4 cup golden flax meal. I also mixed in some vit d emulsion for fun, and used half cashew butter! Thank you for an quick and easy recipe!

    Hi,
    Do you think I could use almond butter instead of coconut flour? I have an auto immune disease which is why I eat paleo but I also discovered I may be allergic to coconut:(

      Hi Claudia, unfortunately, more almond butter won’t thicken the bars the way that coconut flour will. You *might* be able to use almond flour, but proceed with caution since almond flour is MUCH less absorbent than coconut flour. Start with 3/4 cup almond flour and experiment until you get the consistency you like (basically, they should be thick and dense enough to cut through.) So sorry to hear about your possible allergy to coconut. 🙁 Big hugs. xo
