Gluten Free Peppermint Brownie Cookies aka Brookies Recipe (Vegan, GF, Dairy-Free, One Bowl)
Gluten Free Peppermint Brownie Cookies Recipe (V, GF): a one bowl recipe for soft, decadent and fudgy brownie cookies (aka brookies) bursting with cool peppermint flavor and melted chocolate chips. Vegan, Gluten-Free, Dairy-Free.
What are your favorite things to do during the holidays? At home with Erik, we love to bake all the cookies, start up our annual candy workshop, and watch our favorite Christmas movies.
There just something about that line in Christmas Vacation when Chevy Chase mentions the jolliest bunch of… that always cracks us up like no other.
I mean, who cannot relate to trying to make the best Christmas ever for your family and then, end up failing miserably? It’s so #truestory when Chevy Chase’s character spends like 500 hours climbing all over that dangerously slippery rooftop and hanging like 5 million Christmas lights… only to find that they won’t light up.
Like, oh, COME ON!!
Every year, Erik and I have THE longest list of holiday treats to make, and it’s like the most insane Ford assembly line of whisking, dipping, drizzling and cooling that you’ve ever seen. Every single surface of the kitchen, the bed, the sofa, the TV stand, the coat rack and let’s face it, the floor covered festively (!) in giftwrap as a makeshift drop cloth are covered in cookies, chocolate and quick breads.
One year, I may or may not have slipped on an unseen, minuscule-ish pile of melted chocolate on the floor, slid right onto that giftwrap drop cloth, nearly dropped the four, yes four, plates of cookies in my hands.
But saving those cookies came at a sacrifice. Meaning, I had to do some mid-air acrobatics to balance those piled-up high cookie plates, maneuver my left foot like so, and ended up landing.
Right on top of two cookie sheets, covered in 6 batches of homemade candy.
!!!
Let’s just say I may have some artful language not dissimilar to Chevy Chase’s in Christmas Vacation.
And let’s just say that I went ahead and double-crossed out any future ideas for a makeshift drop cloth candy cooling station for the holidays.
Ah… the pressure and the hilarity of the holidays!
This year, we’re going to try and limit the amount of treats we make. We’re thinking about doing 2-4 candy recipes and 2-5 baked goods. Yeeeeees, I have to admit, it was really hard not writing 6-8 candy recipes. I’m just too much. Even I can admit it!
Here’s the list of homemade treats we’ve narrowed it down to (we sooo need to eliminate some of these! Help!!):
Brownies
- Moist & Fudgy Ganache Peppermint Brownies
- Or Ultimate Fudgy Paleo Vegan Brownies
- Super Fudgy Maple Pecan Paleo Brownies
Candy + Bars
- Paleo Almond Joy
- OR Coconut Chocolate Bars
- OR Almond Joy Truffles (or maybe two batches of these, since my mom LOVES chocolate, coconut and almonds)
- No Bake Chocolate Peanut Butter Bars or Paleo Chocolate Almond Butter Bars
Cookies
- Easy Vegan Peanut Butter Cookies
- Gluten Free Vegan Oatmeal Chocolate Chip Cookies
- Triple Chocolate Peppermint Cookies
Quick Breads/Baked Treats
- Gluten Free Vegan Pumpkin Bread
- Vegan Peppermint Mocha Cupcakes (which Erik already requested, mostly because he really wants to be the one to frost this time… we’ll see.) 😉
- Or Maple Pecan Pumpkin Muffins
- Or Chocolate Pumpkin Bread (Jenny’s fave, so I’m leaning towards this one)
- Or Paleo Apple Pecan Coconut Crisp (Jenny ate half of one batch in like 10 minutes… so this is a high contender)
And then, the little treats we make for ourselves for Holiday Bakeathon Fuel:
- Skillet-Roasted Maple Cinnamon Pecans
- Pumpkin Chocolate Chip Oatmeal Breakfast Cookies or Pumpkin Chocolate Chip Oatmeal Breakfast Bars or homemade KIND Bars
- Chocolate Pecan Fudge
- 3 Ingredient No Bake Peanut Butter Oatmeal Cookies or the version with coconut (no bake peanut butter coconut oatmeal cookies)
So what do you think I should cut?? I’m still not sure and the days are ticking off! I might just send this list to my fam and see what their votes are for. (But honestly, they might read this post and text me about it without needing any kind of notice haha).

Gluten Free Peppermint Brownie Cookies aka Brookies Recipe (Vegan, GF, Dairy-Free, One Bowl)
- Yield: 18-24 cookies 1x
Description
Gluten Free Peppermint Brownie Cookies Recipe (V, GF): a one bowl recipe for soft, decadent and fudgy brownie cookies (aka brookies) bursting with cool peppermint flavor and melted chocolate chips. Vegan, Gluten-Free, Dairy-Free.
Ingredients
Brownie Cookies
- 1/4 cup natural, unsalted creamy almond butter
- 1/2 cup coconut sugar
- 1/3 cup pure maple syrup
- 1/4 cup + 2 tablespoons melted coconut oil
- 1 1/2 teaspoons peppermint extract
- 1/4 teaspoon salt
- 3/4 cup unsweetened cocoa powder
- 2 flax eggs (2 tablespoons ground flax + 6 tablespoons water, whisk together, set for 15 mins)
- 3/4 cup + 2 tablespoons gluten free oat flour
- 1/2 teaspoon baking powder
- 1/2 cup vegan chocolate chips
Optional Topping
- 2–3 tablespoons vegan chocolate chips
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
- In a medium bowl, whisk together almond butter, coconut sugar, maple syrup, coconut oil, peppermint and salt. Whisk until it resembles caramel.
- Add cocoa powder in ¼ cup increments, whisking until shiny and smooth. Scrape down the sides of the bowl as necessary. Add flax eggs, whisking until well incorporated.
- Add oat flour and baking powder. Using a rubber spatula, fold until well incorporated and no flour patches remain. Dough will be sticky. Fold in chocolate chips.
- Using a 2-tablespoon cookie scoop, scoop and drop cookie dough onto the prepared cookie sheet, spaced evenly apart. Dough will be sticky and soft. Using your fingers, shape cookies into round discs. Optionally, press chocolate chips into the tops of each cookie. Cookies will spread. If thinner cookies are desired, tap the pan a few times to lightly flatten the cookies.
- Bake for 8-12 mins. Mine took 10 minutes. Place the baking sheet of cookies on a cooling rack; allow to cool for 10-15 minutes. Using a heatproof spatula, lift cookies onto the cooling rack to completely cool. Enjoy! Storing instructions below.

I’ve had this bookmarked for awhile and thought it would be the perfect choice for a party last night – it was! I can always count on your recipes to be delicious even without the gluten, dairy, and eggs. Despite running a bit short of cocoa powder after the disaster where I used half a roll of paper towels cleaning up after somehow dropping a Costco-sized container of melted coconut oil and spilling roughly 1/3 of it (UGH!), hoping the right amount magically landed in the mixing bowl, these turned out the right texture and got glowing reviews. These do seem more of a dark chocolate but I’d definitely make them again. Hopefully next time I’ll actually get to measure the coconut oil. 😛
Aww thank you, Cherish. 😊 Oh boy, I’ve definitely been there with the kitchen shenanigans. I feel your pain! 😫 I’m so glad you enjoyed the brownies, even with the unexpected issues. Can’t wait to hear how they go next time! 🙂
Can you use real eggs?
I haven’t tried it myself, but I’ve had some readers do so in other recipes with good results. If you try it, let me know how it goes!
I love this recipe. It’s easy, quick and delicious 🙂
Yay! So happy to hear it Ana! .
Hello! Will regular flour or whole wheat flour work instead of oat flour? I was in the middle of making these, (the yummy bowl of magical batter is still out on my counter) when I realized I am out of oats! Oops. Btw, the batter itself is just about the best thing I’ve ever tasted! 😉
Haha I know, the batter is seriously soo tasty! . I haven’t tried it with this recipe, but I have had several readers use both types of flour with the brownies that these cookies are based on with good results. Let me know how it turns out Palutena! 🙂
I ended up using whole wheat flour and it worked like a charm!!! I have now discovered that mint + chocolate may be the best thing in the world. Ever. Seriously, these cookies turned out amazing!! Gosh, EVERYTHING from beamingbaker turns out amazing! But seriously, I might have eaten three as soon as they were out of the oven…! 😉 Have a very merry Christmas!!
Woohoo!! So glad the swap worked so well! Mint + chocolate: Right!!! It’s seriously one of my favorite flavor combos ever and I will never stop loving it!!! As usual, it’s such a true joy reading your wonderful comments, Palutena! 🙂 Wishing you a very merry & spectacular Christmas, FULL of YUMMIES!!! .
Oh! I’m going to need to make these for my husband! He is newly GF!
Can’t wait to hear what you both think! 🙂
I love ALL the peppermint recipes this time of year, and these cookies look so delicious! They look soft and chewy, and so full of flavour!
Hope you have an awesome weekend, Demeter! xo
They’re the BEST!! Especially the scent. 🙂 Thanks so much, Marsha! Hope you have an awesome week! xo
These cookies look AHHHmazing! I can’t wait to try them!
Thanks Jennifer! Can’t wait to hear what you think! 🙂
I love your flavors! They sounds so good!
Thanks so much! Enjoy!
Your chocolate recipes always look SO incredible!!
Aw, thanks Amanda! 🙂
These look perfect. Chocolate and peppermint are the perfect match!
Thank you! SO true!
I wouldn’t eliminate anything from your baking list!! Everything sounds so wonderfully amazing, especially these brookies!
Haha. We definitely think alike! 😉 Thanks Jen!
You do quite a bit of candy making and baking for the holidays! Even your shortened list is longer than mine. Maybe just do one pumpkin item instead of two? Anyway, your brookies look delicious, and I’d never guess they’re vegan and gluten free.
Haha. Don’t I know it! 😉 I always get so many requests from my fam and it’s hard to say no–or really cut down on my favorite activity! Thanks for your suggestions!
Demeter your cookies look gorgeous! Can’t believe they are gluten-free, dairy-free and vegan at the same time. That should help us getting into more healthier sweet. btw your close up just got me into cookie mood, I am off to the kitchen. =D
Aw, thanks so much, Helene! 🙂 There’s nothing quite like a healthier sweet to help us through the holidays. Enjoy! 🙂
These brownie cookies look incredible! I love the thought of them having mint – yum!
Mint and chocolate are the best!
I never heard about Brookies… Love this idea. They look absolutely decadent. Saving for later!
Brookies are SO much fun! Especially if you can’t decide between a brownie and a cookie. Haha. Enjoy!
I love using oat flour in baked goods like this and think it has such a nice flavor and texture. Even my kids can’t tell they are gluten free. Sounds like you do some seriously amazing baking over the holidays. That is definitely one of our favorite holiday traditions – decorating sugar cookies to leave for Santa. My kids are getting older but I”m hoping that’s a tradition that stands the test of time. This look amazing!
Oat flour is the best!! Totally my favorite GF flour to bake with! 🙂 Oh gosh, the baking madness has already begun (before Thanksgiving, let’s admit it haha). Aw, I hope that you and your kids get to do that for decades to come–we’re never too old for COOKIES!
